Our grapes are harvested since 2009 with a high quality machine. The day of harvest is carefully chosen according to the plot. The harvest is brought in front of the vat room, then the berries are carefully selected to obtain the best grapes quality. They are slightly crushed, and pumped directly into our concrete vats to avoid any diffence in temperature. The different grapes variety are vinified seperatly to allow them to express their full diversity. Moderate temperatures allow us to extract gently the color and tanins of the pips and skins. After the fermentations our wine is casked into oak barrels (30 % of new oak barrels). Our wines age for about 12 months in our cellar. The bottling is made at Chateau de Lescours with the best care.
